Ingredients:

  • 1 can (15oz.) black beans, rinsed and drained
  • 1 can (8.75oz.) whole kernel corn, drained
  • 1 bunch sliced green onions
  • 1/4 cup chopped green, red, or yellow peppers
  • 1/4 cup diced fresh tomato
  •      MUSTARD VINAIGRETTE
  • 1/4 cup olive oil
  • 1/4 cup white wine vinegar
  • 2 tablespoon fresh lime juice
  • 2 tablespoon EAST SHORE Chipotle Mustard
  • 3 tablespoon chopped fresh cilantro
  • 2 teaspoon chopped fresh oregano
  • 1 crushed garlic clove

Directions:

Combine vegetables in a bowl and set aside. Combine all vinaigrette ingredients in a bowl and whisk to blend. Drizzle vinaigrette over the vegetables and toss to mix. Chill for at least 4 hours before serving. May be served as is, on a bed of mixed greens, or with tortilla chips.
